Peruvian-Style Roast Chicken

  • 1 tbsp olive oil
  • 2 lemons
  • 4 tbsp Lima blend
  • 1 (4-4½-pound) whole chicken

For the green sauce:

  • 1 cup cilantro leaves
  • 1 jalapeño, chopped
  • 1 garlic clove, chopped
  • 1 tbsp olive oil
  • 2½ tsp lime juice
  • ¼ tsp salt
  • ⅓ cup mayonnaise

Instructions

  1. Preheat oven to 400 degrees F. place chicken on cutting board and spatchcock it. Remove the backbone and reserve it for stock. Rub lemon juice over chicken and coat with Lima blend. Roast again for 45-50 minutes.

    Make the green sauce:
  2. Meanwhile, make green sauce, add all sauce ingredients to a blender and process until smooth.
  3. Serve Peruvian roasted chicken with green sauce.
