San Juan Scrambled Eggs

  • 8 large eggs
  • 1 tbsp olive oil
  • 4 scallions, sliced
  • 1 tbsp San Juan blend

Instructions

  1. Grab a small bowl, whisk eggs with San Juan until smooth and fluffy.
  2. Heat oil in a pan, add slices of scallion nd cook for few minutes.
  3. Then stir in eggs and cook for 2 minutes. Serve immediately with cheese, tortillas, and black beans.
