San Juan Scrambled Eggs
- 8 large eggs
- 1 tbsp olive oil
- 4 scallions, sliced
- 1 tbsp San Juan blend
- Grab a small bowl, whisk eggs with San Juan until smooth and fluffy.
- Heat oil in a pan, add slices of scallion nd cook for few minutes.
- Then stir in eggs and cook for 2 minutes. Serve immediately with cheese, tortillas, and black beans.
