One-Sheet Roasted Chicken and Vegetables

Grilled Turkey Thighs

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 2 1/2 cups potatoes, diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 5 tbsp Stockbridge blend
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 5 garlic cloves

Instructions

  1. Preheat oven to 400 degrees F. Line parchment paper on a large baking sheet.
  2. Place chicken breast on large bowl, add Stockbridge blend and rub to coat evenly. Set aside and let marinate for 30 minutes.
  3. Coat all the veggies with olive oil. Place chicken breast on baking sheet, top with veggies and bake for 30 minutes.  Serve and enjoy!
