
Jamaican Shrimp Curry
- 2 tbsp coconut oil
- 1 yellow onion, chopped
- 2 bell peppers, seeded and chopped
- 1 13 oz. can, coconut milk
- 2 tbsp Kingston
- 2cups fish or chicken broth
- 1 lb. shrimp, peeled
- 5 green onions, sliced
- Cooked rice (for serving)

Instructions
- In a large pot, heat oil over medium heat and stir in Kingston and chopped onion and cook for 4 minutes.
- Now, add peppers, broth and coconut milk. Simmer for 10 minutes.
- Then add shrimp and green onions and simmer for 10 minutes.
- Serve hot curry with rice.
