Jamaican Shrimp Curry

  • 2 tbsp coconut oil
  • 1 yellow onion, chopped
  • 2 bell peppers, seeded and chopped
  • 1 13 oz. can, coconut milk
  • 2 tbsp Kingston
  • 2cups fish or chicken broth
  • 1 lb. shrimp, peeled
  • 5 green onions, sliced
  • Cooked rice (for serving)

Instructions

  1. In a large pot, heat oil over medium heat and stir in Kingston and chopped onion and cook for 4 minutes.
  2. Now, add peppers, broth and coconut milk. Simmer for 10 minutes.
  3. Then add shrimp and green onions and simmer for 10 minutes.
  4. Serve hot curry with rice.
