Curry Mango Shrimp
- 2 tbsp peanut oil
- 1/3 cup onion, chopped
- 2 cups mango, cubed
- 3/4 cup coconut cream
- 1 tbsp Kingston
- 1/4 cup water
- 1 3/4 lb. shrimp
- Take a large skillet, heat oil over medium heat and cook onions for 3 minutes. Stir in Kingston blend and cook for 1 minute.
- Add the chunks of mango and cook for 1 minute. Stir in coconut cream and cook for 1 more minute.
- If the mixture seems thick, add water. Now, add shrimp and reduce the heat low.
- Cook for 10 minutes or until shrimp is cooked and the sauce has thickened. Serve and enjoy!
