Curry Mango Shrimp

  • 2 tbsp peanut oil
  • 1/3 cup onion, chopped
  • 2 cups mango, cubed
  • 3/4 cup coconut cream
  • 1 tbsp Kingston
  • 1/4 cup water
  • 1 3/4 lb. shrimp

Instructions

  1. Take a large skillet, heat oil over medium heat and cook onions for 3 minutes. Stir in Kingston blend and cook for 1 minute.
  2. Add the chunks of mango and cook for 1 minute. Stir in coconut cream and cook for 1 more minute.
  3. If the mixture seems thick, add water. Now, add shrimp and reduce the heat low.
  4. Cook for 10 minutes or until shrimp is cooked and the sauce has thickened. Serve and enjoy!
