Anticuchos de Pollo

  • 5 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp Lima blend
  • 1 1/2 lb. chicken thighs, boneless and skinless, cut into chunks
  • Wooden skewers

Instructions

  1. Preheat grill to 450 degrees F. Soak wooden skewers in water for 20 minutes.
  2. Place chicken in a medium bowl, add lima blend and other ingredients in it. Rub to coat well. Marinate for 20 minutes.
  3. Thread 4 pieces onto each skewer. Grill for 4 minutes (each side). Serve with your favourite sauce.
