Anticuchos de Pollo
- 5 tbsp olive oil
- 3 tbsp red wine vinegar
- 2 tbsp Lima blend
- 1 1/2 lb. chicken thighs, boneless and skinless, cut into chunks
- Wooden skewers
- Preheat grill to 450 degrees F. Soak wooden skewers in water for 20 minutes.
- Place chicken in a medium bowl, add lima blend and other ingredients in it. Rub to coat well. Marinate for 20 minutes.
- Thread 4 pieces onto each skewer. Grill for 4 minutes (each side). Serve with your favourite sauce.
